Carrot & Ginger Soup

Ingredients:

  • 6 pcs of medium-sized Delizia Carrots, peeled and chopped

  • 1 large onion, diced

  • 3 cloves Delizia Garlic, minced

  • 2-3 tablespoons of Delizia Ginger, grated

  • 1 small potato, peeled and diced

  • 4 cups vegetable broth

  • 2-4 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh cilantro or parsley for garnish (optional)

  • Coconut milk for garnish, optional


Instructions:

  1. Prepare the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.

  2. Add Aromatics: Add the minced garlic and grated ginger to the pot. Sauté for an additional 1-2 minutes until fragrant.

  3. Add Vegetables: Add the chopped carrots and potato to the pot. Stir to combine with the aromatics.

  4. Cooking: Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat, cover the pot, and simmer until the vegetables are tender (about 15-20 minutes).

  5. Seasoning: Season with salt and pepper to taste.

  6. Blend: Use a blender to puree the soup until smooth.

  7. Garnish: Adjust the seasoning if necessary and optionally garnish with fresh cilantro/parsley & coconut milk.
