Carrot & Ginger Soup

Ingredients:
6 pcs of medium-sized Delizia Carrots, peeled and chopped
1 large onion, diced
3 cloves Delizia Garlic, minced
2-3 tablespoons of Delizia Ginger, grated
1 small potato, peeled and diced
4 cups vegetable broth
2-4 tablespoons olive oil
Salt and pepper to taste
Fresh cilantro or parsley for garnish (optional)
Coconut milk for garnish, optional
Instructions:
Prepare the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
Add Aromatics: Add the minced garlic and grated ginger to the pot. Sauté for an additional 1-2 minutes until fragrant.
Add Vegetables: Add the chopped carrots and potato to the pot. Stir to combine with the aromatics.
Cooking: Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat, cover the pot, and simmer until the vegetables are tender (about 15-20 minutes).
Seasoning: Season with salt and pepper to taste.
Blend: Use a blender to puree the soup until smooth.
Garnish: Adjust the seasoning if necessary and optionally garnish with fresh cilantro/parsley & coconut milk.
Serve hot and enjoy the comforting flavors of carrot, garlic, and ginger!
